I found the one Kimberly gave me originally that I liked so much!

Feta Chicken Bake (we add spinach to this recipe)

Serving Size : 6

6 boneless chicken breast
2 tablespoons lemon juice -- divided
1/4 teaspoon salt
1/4 teaspoon black pepper
3 1/2 ounces Reduced fat crumbled Feta cheese with
Basil and Tomato
1/4 cup red pepper -- finely chopped
1/4 cup fresh parsley -- finely chopped
14 1/2 ounces Hunts Tomato Diced in Sauce
Preheat oven to 350. Arrange chicken in 13x9 baking dish. Drizzle with 1 tbsp. of lemon juice. Season with salt and pepper. Add tomaotes and top with cheese, drizzle with remaining lemon juice. Bake 35-40 minutes or until chicken is cooked through. Sprinkle with red pepper and parsley.
