wow, that's a tough one, i was already married when we found out my wife has pcos. i may not be the best person to give advice on this sort of thing, as my wife and friends like to point out i am not a normal guy but it sounds like you found someone special. i can understand this would be a hard subject to just bring up, but i fell it would be less painful for everyone involved if you are up front about it, let him know early so it doesn't get too serious and have him freak out then. i mean don't bring it up on a romantic dinner or something but just tell him that there is something you want to talk about and just give him as much info as you can, so that he is aware and can try and learn more on his own, this site helps if he is interested
