I have a delicious recipe:
Mixed Bean Chilli (Serves 4)
1 tablespoon olive oil
1 onion, chopped
1 clove garlic, crushed
1 red pepper, chopped
1 green pepper, chopped
1 red chilli, deseeded and finely chopped
1 x 400g can of butter beans, drained
1 x 400g can of red kidney beans, drained
1 x 400g can of chickpeas, drained
1 x 400g can of chopped tomatoes
2 tablespoons tomato puree
2 tablespoons fresh coriander, chopped
- Heat the oil in a medium pan, add the onion, garlic, peppers and chilli, fry for 2-3 minutes until beginning to soften.
- Add to the pan the beans, tomatoes and tomato puree.
- Bring to the boil and simmer for 10 minutes. Stir through the coriander and serve with rice (basmati for Low GI).
If you don't like the pulses listed or you want to vary it, just replace them with the same weight of other pulses, a can of already mixed beans would make a nice change.
I don't add the coriander or use the chilli (i use chilli powder) and its still scrummy!.
