Outside of the PCOS aspect, I'd say what you are describing in regards to the sugars, is called hypoglycemia

"All carbohydrates (vegetables, fruits and grains, as well as simple table sugar), are broken down into simple sugars by the process of digestion. This sugar enters the blood stream as glucose and our level of blood sugar rises. The pancreas then secretes a hormone known as insulin into the blood in order to bring the glucose down to normal levels.

In hypoglycemia, the pancreas sends out too much insulin and the blood sugar plummets below the level necessary to maintain well-being."

I used to have this happen when I was younger, i'd eat.. half an hour later feel like crap because of it.

Its a matter of what you are eating, and how often. Best thing to help with hypoglacemia is diet, and making sure to eat properly, that being 3 main meals and 3-5 snacks a day. Stay away from processed carbs, natural sugars are better for you, and won't create the same havoc.

I've been taking Metformin for ... i dunno how long now. lol I can't say it has helped this, as it stopped happening for me once watching my diet more carefully.

Ofcourse, i'm no doctor so this is just IMHO
