I love Slim Fasts Low Carb chocolate shakes in the morning for breakfast. Very easy and convenient too! I also buy Kirkland's Mixed Nuts variety pack. They're an easy way to have a few snacks.
As for lunch and dinner I have really enjoyed Mexican Pie, Bacon Quiche, Cabbage Roll Casserole, Hamburger Pie, LC Chilli, Tuscana Soup, etc.
Here's a few recipes: Mexican Pie
2 lbs. ground meat, cooked & drained
(use ground sirloin, lean ground pork, or
ground white meat turkey or a combination of any two.)
1/2 cup chopped onions
1/4 cup chopped green pepper
2 teaspoons chili powder
8 oz. shredded cheddar cheese
8 oz. can tomato sauce
1/2 teaspoon garlic powder
1/2 cup + 1 Tablespoon sour cream
1 egg white, beaten stiff
Place meat, onion, pepper, sauce, garlic & chili powder in skillet. Simmer 8 to 10 minutes. Spray 8x8 pan with Pam (or grease). Put meat mixture in pan. Beat together cheese, sour cream and egg white and put on top of meat mixture. Bake at 375°F for 25-30 minutes. Bacon Quiche
10 strips Bacon
4 large Eggs
1 cup Heavy Cream
1/2 cup Water
1/4 teaspoon dried Thyme
1/8 teaspoon White Pepper
1/2 cup shredded Gruyere cheese
1/2 cup shredded White Cheddar cheese
Preheat oven to 375°F.
In medium skillet, cook bacon over medium heat until crisp (Approximately 8-10 minutes).
Transfer to paper towel to drain. In a small bowl, whisk together the eggs, cream, water, thyme and pepper. Pour into greased pie dish. Crumble bacon. Sprinkle the egg mixture with the bacon, Gruyere cheese and Cheddar. Back until golden and custard is set, (about 30 minutes.) Allow to cook 10 minutes before slicing. Texas Style Chili
2 cloves garlic, minced
1 cup onion, chopped
3 Tablespoons olive oil
2 lb lean beef, chopped
4 cups canned tomatoes, undrained
OR 4 cups beef stock or broth
2 teaspoons salt (omit if using salted stock/broth)
2 bay leafs
1 teaspoon oregano
1/4 teaspoon crushed cumin
2-3 Tablespoons chili powder (or to taste)
2 16-oz cans Eden Black soy beans, drained (can omit)
Use a deep heavy kettle or Dutch oven, and cook the garlic, onion, olive oil and beef together for about 10 minutes. The meat should be chopped, not ground, and cooked, at this stage, only long enough to lose its red color.
Next add the tomatoes OR beef stock. Add the seasonings and simmer for about an hour or until meat is very tender. Then add the beans and simmer for another 30 minutes. Make this a day or two ahead if you can, for it gets better with age. It can also be made weeks ahead of time and frozen. Freeze only the meat mixture and add the beans when re-heating. |
