We had a diabetes educator present at a luncheon sponsored through work and it was on carbs and how to eat. Green leafy veggies, carrots (yes they are!) green beans, asparagus and other non-starchy veggies and legumes are okay to eat as much as you want. You can have dairy and starchy foods but not as much. You have to be very careful on fruit and fruit juice but they are allowed, just in small amounts. Protein eaten with carbs will help keep your blood sugar steadier and fill you up. Be sure to check your sugar before you eat and 2 hours afterwards. Your doctor should give you guidelines on your numbers. For me, fasting glucose is to be under 120, after meals under 150, although the ADA says 180. You learn by trial and error.
