Beans though high in carbs, I believe are low on the GI scale due to the massive amounts of fiber.

We do a lot with sweet poatoes including deep frying them in good oil. You can get whole wheat pastas and flours, as well as whole wheat crackers.

One of my favorite types of salads:

Mixed greens
Cranberries
Raisins
Pickles
Tomatoes
Cheese
Nuts
Seeds
With cottage cheese and fruit on the side

My MIL makes a good Italian salad:
Mixed greens
Olive oil and vinegar dressing
Parmesan cheese
Tomatoes
Olives
Kidney beans, drained
Onions
Cucumbers

You can have this with cheese stuffed whole wheat shells.

DH once made a smiliar dish for the vegetarians at our church. It was a big hit. I'm not sure the spices he used though.

For more vegetarian dishes I would recommend the original 1970s Fit For Life. We have the book and it's full of vegetarian recipes that can be adjusted easily for low carb eating. You can probably get it cheap on Amazon.
