If you've been avoiding red meat for a long time I might suggest rabbit, It's diet is very similar to that of the larger grazing animals with out the ethical impact.
I'd suggest starting with a broth, then soup then stew...
It may still give your guts some grief but it won't have all the extra hormones and drugs in it that are required to get a cow to the dinner plate.
As far as iron problems kale and spinach are so much more digestible that they should be your first line of attack on that front. And this is coming from a girl who loves her steak ( i just don't ever try to justify it as healthful)
