When I was doing atkins I ran across a recipe for low GI tortilla chips that looked good... I think you had to use unflavoured whey protein powder, wheat bran, and ground almonds to make them. They may have had pumpkin seeds in them as well.
You'd be surprised what you can fake -- with ground almonds you can make fairly convincing cakes and cookies and mixing eggs with protein powder made a good pancake batter... not quite the same but by that time I was desparate for something that wasn't meat, cheese, or salad. |
