I used to know someone who worked in the food industry. A small amount of potato starch is used to keep some types of cheeses from reforming themselves into a block in the bag. I doubt there's more than a quarter teaspoon in a whole bag of shredded cheese.
It certainly never bothered me in the slightest when I was doing low carb, but I still preferred to shred my own because it just tastes so much fresher. |
