Saute it with a little garlic and olive oil. Or for creamed spinach add a little milk/half and half and parmesan cheese.
It is great in Turtle Soup too! (in New Orleans turtle meat is used usually along with veal and beef, other places tend to leave out the turtle meat as it is impossible to find). This soup is a meaty broth soup that has lots of sherry, spinach, mushrooms, boiled eggs, and some other stuff. I highly recommend trying it if you happen to find a restaurant that serves it or make it at home. Here is the recipe
