I got a recipe for veggie frittatas from the South Beach book which is tasty and low-carb.
I don't have the exact recipe, but here's what I do:

2 eggs
egg white, according to amount of veggies
veggies cut fine (I use broccoli, thawed chopped spinach, onions, green peppers)
salt, and pepper flakes
shredded low fat mozarella cheese, half a handful

Mix together. I add the egg white last, adding enough egg white to make the mixture cake batter consistency.

Bake in muffin tin. Each is meant to have 80 cals or so and I have 2 for breakfast. Some days I eat one with a salad for lunch.

They are delicious! A friend adds chopped up cooked lean sausage to hers for additional protein. I plan to try that in the future, but the veggie version is a great recipe on it's own too.
