Here is a dish my Mom used to make all the time that I LOVE!

Mix one box of shredded spinach, 1 egg, lemon juice (to taste...start with a tablespoon), and bit of salt and pepper, and crumbled feta cheese (again to taste/portion control).

Take a large spoonful and put into the middle of a tilapia fillet. Roll the ends of the fillet around the spinach mixture, stand it up on end, and put into a sprayed baking dish. Sprinkle with dill. This works best if you make several at a time, and lean them against each other in the baking dish. Cover, and cook for about 20 min at 350* (Shorter time/lower temp with a gas oven).

These are delish, and really good when served with fresh lemon slices to squeeze over the top!
