Stuffed Peppers are delish! I recommend stuffing peppers with quinoa. You should check out Veganomicon from your local library (or interlibrary loan system). There are recipes in there for roasting peppers and making quinoa.
For the quinoa, I substitute chickpeas with frozen veggies like corn, peas and chopped carrots. Quinoa needs to be rinsed before cooking, but then after that it cooks like rice. Once the quinoa and peppers are done, simply stuff the quinoa into the peppers and voila!
Quinoa is high in protein and very yummy. Plus, there are numerous ways to prep it and use it. You should try a search for quinoa recipes--you'll find many!
