Here is something I do when I'm tired of the same ol' same ol'.
Saute low GI veggies: squash, aspragus, green beans, brocolli. Then, I toss in a few halved cherry tomatoes or diced tomato, and let it juice out and come together. I salt and pepper this, maybe throw in some parsley. Then I crack one or two eggs over it, and cook the eggs until they are medium. I slide it out of the pan and break the yolks so they run down on everything. If I can afford the calories that day, I'll sprinkle with swiss or cheddar. There is something about the veggies and the sweet tomato, and the yolks all getting together that is just amazing (to me, at least). And if I have the cheese on there.... oh heaven! |
