My MIL makes Spinach Quesadia's in a skillet on stove top.
She just makes a small amount of hamburger with some taco seasoning puts it on whole wheat tortilla, tops with frozen thrawed & drained spinach & cheese, puts the other whole wheat tortila on top of that, browns the bottom, flips it to brown the other side and serves with rice -- its yummmy
