Put about a Tablespoon of broth in a pan, then add a bunch of spinach. Top with a white fish fillet that has been seasoned with salt, pepper, and lemon. Put a lid on the pan, and let it cook about 5-10 minutes, depending on how thick the fish is. The whole things steams up and you'll have the juiciest, most succulent fish ever sitting on a bed of tasty spinach.

Everyone else has great ideas too - about the only thing I could add is that sometimes, I eat the spinach straight out of the bag. For more flavor I'll add a little balsamic vinegar or lemon juice and shake it up. But then you have to eat it quick or else the acids will "cook it" if you leave them too long. Sometimes I do this when I want a "mindless" TV food (not a good habit, but every now and then you want to munch, ya know?) instead of popcorn.
