I'm bumping this up... I haven't been posting here for a while, kind of fell off the wagon of treating my PCOS...
Anyhow, I saw that they're not going to make the DCI pill anymore, which I think makes it even more important to figure out how we can get it from food.
I'm in the process of making this recipe even better (fluffier muffins, even more DCI, even less carbs); I'll post it when I've made a test batch I'm happy with.
I'm using these in conjunction with an otherwise low-carb diet, which makes it nice because then I can have a muffin for breakfast or a snack instead of eggs or cheese sticks!
