Alcohol is not very beneficial for insulin resistance. If alcohol is available, the body will use it as the first choice for energy, rather than blood sugar, so less carbs will be utilised as energy, making your blood sugar levels stay higher for longer.
Another thing that alcohol does is increase testosterone levels, which is bad news for those with PCOS, and it also puts a strain on your liver, and disrupts the normal balance of bacteria in the gut.
You might be able to get away with the odd drink here and there, but regular drinking is not the best thing. You should find your progres improves if you reduce the alcohol as well
