I thought it would be nice to have all of the chicken recipes in one place for easy reference. I LOVE chicken but sometimes I get tired of cooking it the same way. Im always looking for new yummy chicken recipes. Please feel free to post all of your chicken recipes here!

8 oz angel hair pasta, uncooked
2 cups broccoli florets
1 lb. boneless skinless chicken breast (cut into thin strips)
1/2 cup Kraft Asian Toasted Seasame Dressing (I use the light one)
2 tbsp soy sauce (I use reduced sodium)
1/4 tsp each; ground ginger, garlic powder, crushed red pepper
1/3 cup chopped planters peanuts (optional)
Cook pasta as directed on package, adding broccoli to the boiling water for the last 3 min. of the pasta cooking time.
Meanwhile, spray a large nonstick skillet with cooking spray: med to med high heat. Add chicken cook 6-8 min or until done. Stir in dressing, soy sauce, ginger, garlic, and crushed red pepper; cook 1 min stirring occasionally.
Drain the pasta mixture, place in a large bowl and chicken mixture mix lightly. Serve and sprinkle with peanuts.
DH is very picky but he loves this dish and its so easy! I leave out the peanuts cause Im allergic to them.

4 large chicken breasts
1 can of cream of mushroom
1 cup of salsa
1 package of taco seasoning
1/4 - 1/2 cup of water ( I added this b/c mine would burn with out the extra liquid)
1/2 cup sour cream
place chicken in the bottom of your slowcooker
mix the soup, salsa, water, and taco seasoning in a separate bowl. Pour over chicken.
Cook 4 hours on high or 8 hours on low.
Stir in sour cream
Serve over rice
*I dont use the sour cream

I have a great recipe for Chicken Chili, but I don't really know how much of each ingredient I put in it. I just add the seasoning until it tastes good. I'll post what I have of a recipe for it.
Chicken Chili
1 package fresh chicken breast tenders, chop into bite size pieces
2 cans great northern beans (or chili beans and cut back on the chili powder)
1 can black beans
1 can green chiles
2 cans tomatoes
1/2 of a large onion
1 green bell pepper
and the spices I just add to taste, maybe about a tsp or so
chopped garlic
basil
parsley
salt
pepper
chili powder (about 4 tbsp)
fajita seasoning
tony chachares creole seasoning (just to give it a little bit of spice)
olive oil
Brown the chicken with the onion and green bell pepper in olive oil in the bottom of a large pan. When the chicken is done, add the remaining ingredients and allow to simmer for about an hour. You can also brown the chicken and then put everything in a crockpot on high for about 6 hours.

*cut chicken up into bite size pieces. and cook through. *in same pan add a box of chicken rice a roni and make like directed! *very simple and great & tasety meal!
baked chicken dijon
1/4 c.dijion mustard 1/4 c. evap milk 1/4 c. dry bread crumbs 1/4 c. parmeson cheese 4 boneless chicken breasts
*spray 9x13 baking dish w/pam *mix milk & mustard in bowl *mix crumbs & cheese in another bowl *dip chicken into 1st bowl, then 2nd bowl *put in dish and bake at 475 for 15-20 mins. until golden brown
chicken fried chicken
*mix salt, pepper & flour to taste *dip chicken in milk, then mixture; repeat in that order! *put in hot oil and cook until tender *put on lid to brown
chicken monterey
3/4 c. bbq sauce 6 slices of bacon 6oz cheddar cheese 3 chicken breasts
*pound chicken til thin *saute in pan til almost done *cook bacon in microwave *pour 1/4 c. bbq sauce over each breast; top with bacon and cheese *cover til cheese melts & serve
*serves two / 7 carbs per serving!
crunchy cheese stuffed chicken
1/4 c. shredded cheddar cheese 1 tsp. seaoning salt 1 egg cornflakes 4oz block of cheddar cheese chicken breasts
*cut a 3 inch slit into each breast *insert 1 strip of cheese into pockets *close with toothpicks *mix crumbled cornflakes, shredded cheese and seasoning salt in bowl or plate *beat egg in another bowl *dip chicken into egg then into dry ingred.sbake at 4000 for 20-25mins
ultimate chicken fingers
chicken strips 2/3 c. bisquick 1/2 c. parm cheese 1/2 tsp salt or garlic salt 1/2 tsp paprika 1 egg beaten 3 tbsp melted butter
*line cookie sheet with foil and spray *in gallon ziplock bag add bisquick, parm cheese, salt and paprika * dip a few strips into egg then place in bag and shake to coat. *repeat to finish rest of chicken *place on cookie sheet and drizzle with melted butter *bake at 450 for 14 mins, turning over half way through
green chili enchiladas
2 chicken breasts chicken base 1/2 c. flour 1 can green chili 1/4 c. water oil onion/garlic salt pepper cheddar cheese tortillas
*boil chicken til down *put heaped tsp chicken base into broth *add water & flour; whisk;add chili *cut/shred chicken; add to broth;add salt & pepper to taste *dip tortilla in hot oil then lay on paper towel *spoon broth& chicken in casserole dish; put tortillas on top; add more broth & chicken; then cheese; layer til done *cover with foil and bake at 350 for 45mins

A great and healthy way to do chicken is in a romertopf clay pot. There's a million different things you can with it and still keep it healthy. I like to break up a couple of oranges and cloves and bake chicken. Lemon and rosemary. Garlic....Endless possibilities. http://www.romertopfonline.com/
EASY CHICKEN ENCHILADAS!
brown 1-2 lbs. chicken(i season with some kinda spice mixture), then mix together with 1 package cream cheese, and onions, bell peppers(and sometimes i use mexicorn! yum!)...
spray a 9X13 casserole dish
fill tortillas with chicken mixture, roll up and place fold side down in casserole dish.. cover and bake at 350 for 30-45 minutes..
remove from oven, uncover, and sprinkle shredded cheese or make cheese sauce to spread over top of tortillas, put back in oven and bake another 15 minutes...
you can top with fave enchilada toppings, and mix up what you put in with the chicken and cream cheese(black olives, jalapenos, etc..)... i make lots of variations... they are easy and very yummy!

DH likes pitas a lot. I never buy them though, cause I dont know what to do with them. I'll try this as starter and see what else I can come up with. Thanks!
