Default almond meal/flour

I have altered my diet to eliminate bad carbs (potatoes, white flour, etc)...and feel so much better. However, with the holiday season approaching, I'm wondering what to do about baking. Has anyone used almond meal/flour instead of wheat flour? I've read it has way fewer carbohydrates/sugar than bleached/unbleached wheat flour.

Tips? Recipes? Successes?

I'm thinking of using it for a pumpkin pie crust...

I have cut out most carbs and I use almond flour to bake with when I get desperate and want something baked. The best recipe I have found so far is one for muffins. I can't post URL's yet But if you google "almond meal muffins" you will find it on about.com under low carb recipes.

If you follow the links on the bottom there are other recipes like pancakes which are very good once you get used to them. Almond meal is more coarse so don't expect it to be as good as flour or even a substitute for the most part. But I have made many pancakes, muffins and even used it as a batter on oven fried chicken. It was good!

Oh- and for the pumpkin pie- consider a pecan crust! Goes much better with pumpkin

I've used it to make pie crust before. It's tasty, but definitely different from flour pie crust. I used Bob's red mill almond meal, and have since read that it has a grainier texture than some other almond flours/meals.

Another thing to note... pumpkin pies have to cook so long, that the almond crust may burn. Mine got very dark.

I've been looking at a website called Elena's Pantry for low carb bread and pancake recipes. She uses almond flour (a special kind I think you have to order, but she let's you know where) in a lot of them and they look great, though I haven't tried any yet. Not all of her recipes are low carb, since she's geared more towards recipes that are celiac disease-friendly, but some are. I've been dying for pancakes, so if I make some I'll let you know how they came out.
