I have cut out most carbs and I use almond flour to bake with when I get desperate and want something baked. The best recipe I have found so far is one for muffins. I can't post URL's yet

But if you google "almond meal muffins" you will find it on about.com under low carb recipes.
If you follow the links on the bottom there are other recipes like pancakes which are very good once you get used to them. Almond meal is more coarse so don't expect it to be as good as flour or even a substitute for the most part. But I have made many pancakes, muffins and even used it as a batter on oven fried chicken. It was good!
Oh- and for the pumpkin pie- consider a pecan crust! Goes much better with pumpkin
