Any good PORK ROAST recipes I can do in the slow cooker?
The title says it all! DH is obsessed w/roasts and I hate beef roasts w/potatoes, and carrots so we got a pork roast and I am looking for something unique....darn that new crock pot for Christmas!
4 lb boneless pork butt or shoulder
1 cup cola (NOT diet... don't worry, very little sugar will remain in the meat)
1 bottle barbecue sauce of your choice
Directions:
Trim all possible fat from roast. Place in crockpot, pour cola over, cover and cook on low for 10 - 12 hours or until pork can be easily shredded.
Remove pork from pot, shred in a bowl, removing all possible fat. You can use two forks or your fingers (let cool slightly). Discard liquid. Return pork to pot (you don't have to wash it). Add barbecue sauce to taste and mix. Continue to cook on low for 5 - 6 hours, adding more barbecue sauce if needed. Serve as sandwiches in buns. Or just eat as is with coleslaw.
This freezes perfectly.
Cherry Pork Chops (okay, so it's not a roast... but I'm sure he'll get over it)
6 pork chops, cut 3/4" thick
1/4 tsp. salt
1/4 tsp. pepper
1/2 can cherry pie filling (1 c.)
2 tsp. lemon juice
1/2 tsp. instant chicken bouillon granules
1/8 tsp. ground mace
Trim excess fat from chops. Brown chops in hot skillet w/butter or oil. Sprinkle each chop w/salt & pepper. Combine cherry pie filling, lemon juice, chicken bouillon & ground mace in cooker. Stir well. Place pork chops in crockpot.
Cover. Cook on low for 4-5 hrs. Place chops on platter. Pour cherry sauce over meat.
6 servings.

I make those same sandwiches with beef roast....called crockpot beef sandwiches! YUMMY!
Your children probably wouldn't like it, but I make pork roast and saurkraut in the crockpot a lot! Put saurkraut in, put roast in, cook on low for 8 hours, done!

Here is one that really smells and taste so yummy!
Slow cooker Roast Pork with Fruit
1 meduim onion, sliced
1 pork boneless lion roast, 2 pounds
1 package (8 ounces) dried fruit pieces or raisians (1 1/2 cups)
1/2 cup apple juice
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 ground cinnamon
1. place onion in 4 to 5-quart clow cooker. Place pork on onion; top with fruit. Mix remaining ingredients; pour over fruit.
2. Cover and cook on low heat setting 7 to 9 hours or until pork is tender, put fruit mixture over pork.
*This smells so good and so good with the fruit, I sometimes put the dried fruit and the raisins. Hope you enjoy!
1 package (6 ounces) herb stuffing mix
2 meduim celery stalks, chopped (1cup)
1 meduim tart cooking apple, peeled and chopped (1 cup)
1 meduim onion, chopped (1/2 cup)
1 cup dried cherries
1/4 cup butter or margarine, melted
1 cup chicken broth
6 boneless lion chops, about 1/2 inch thick
1. Spray inside of 4 to 5 quart slow cooker with cooking spray.
2. Mix all ingredients except pork. Place half the stuffing mixture in slow cooker; top with pork. Spoon remaining stuffing mixture over pork.
3. Cover and cook on low heat setting 6 to 8 hours or until pork is tender.

I do something similar with beef brisket and a little liquid smoke, smashed garlic, onion powder and worstahshizer (sp? LOL) sauce. Swear - it tastes just like smoked bbq beef that has been smoked all day - DELISH!!

wow, those sound good, but those sandwiches take a minimum of 15 hours!!! I'd go crazy smelling that good food for 15 hours!!!
LOL! That's why you start it in the morning before you go out for the day. Then you can come home to the wonderful smell! And to be honest, 6 hours or so of cooking on high and then just some reheating in the barbecue sauce is plenty.

i have an awesome teriyaki one that is good with rice. i'll get my act together and post it tomorrow! i also believe it is low-cal, but don't quote me!!!

I've never really been fond of the roast thing but w/some different recipes I think I'll find something tasty that we both can live with.
Do any of you have the Fix it and Forget it cookbook for slow cookers?
Ultimately you can take any sauce or seasoning that you like and pop a pork roast into the crockpot. Teriyaki sauce, beer and barbecue sauce, lemon, garlic, oregano and olive oil (Greek flavour), applejuice and curry powder... The possibilities are endless.

I have the fix it and forget cookbook. That thing has some great recipes in it. Also the Cambells soup cookbook. It has a section on slow cookers. I love to cook in my slowcooker. I never use mine any more since I work from home now.
