Question Any recipes for an Italian, carb-loving hubby that are PCOS friendly?

My hubby loves everything that is bad for me: pastas, sweets, snackies.

Anyone have some good recipes that would quench his sweet tooth and Italian craving, but meanwhile not giving me a HUGE waistline?

Thanks,
Melissa

I make a grilled chicken parm (no breading) that is really yummy. It was an old Rachael Ray recipe i saw once and have been making for a longtime. You can serve it with WW pasta, I just eat semolina pasta (it's low GI) and am very careful with my portion size.

The chicken parm is easy. I saute onions garlic, roasted red pepper, and any other veggies i want with a can of diced italian tomatoes. Throw in some italian seasoning and bake that with chicken that was grilled on the grill or george foreman (i season with salt, pepper and italian seasoning) and put a slice of low fat mozzarella on each slice of chicken.

No breading and on the chicken doesn't leave me with any guilt.

I have the same problem with my hubby! He loves soda and all the sweet and snacky stuff I try to stay far away from. We actually decided to compromise on the things he could bring inside the house. For example, he (technically me!) can buy Big Red and Mountain Dew at the grocery store bec I can't stand them, but he definitely can't bring home a 2 Liter of Coca-Cola bec I love it! It's the same with icecream. There are certain flavors I don't like as well and will be less likely to eat them. I don't really have any suggestions for the Italian part of it but the suggestions already given sound pretty good to me. I know this didn't really answer your question but this was our solution to a similar problem.

I like to use Dreamfields pasta when I'm craving Italian. I make a mean low carb lasagne Also there's a great recipe in the the Everyday Italian by Giada De Laurentiis for chicken parm that's relatively low in carbs. Not much breading. (I'm definitely going to look up Rachael Ray's now too)

You can eat pasta ladies. Use the Barilla brand in the yellow box. It's made with chick peas. It has omega 3's, protein and fiber. Just watch your serving size. I learned that from Bob Greene (Oprah's trainer). I'm a pasta lover too! It makes you fuller faster as well.

A really easy sweet low carb recipies is to take 1 pack of sugar free jello, pick your favorite flavor, and mix it with 1 8oz pack of cream cheese and chill.

pasta. But make it without any milk product. I use vegetables like asparagus, cherry tomatoes etc. Usually stirfry the vegetables and add it to whole grain pasta. Add lots of garlic, parsley, basil and thyme. Oh I just love it !!
