I am sick of making chicken the same way week after week. I'd like a good chicken recipe that is lower carb and is good for the south beach diet. I buy boneless, skinless breasts in bulk form Costco and I make chicken at least 1x per week. Any advice?
Do a search on this paticular thread. Because about 1-2 months ago someone posted this same thing about chicken. And there is like 3 pages of ideas.....I'll try and see if I cna find it...

Yes, yes, yes. I posted this before and I can make it once a week. It is a Fiesta Chicken recipe - yummy.
Calls for 8 chicken breast halves.
Mix 3 cups of your fave salsa with 2-3 tablespoons dijon mustard and 2-3 teaspoons of lime juice. Spoon mixture over chicken and bake for 40 minutes at 350 or until no longer pink. Serve on top of brown rice topped with reduced fat shredded monteray jack cheese and chopped green onions. Completely satisifies a mexican craving.

DIRECTIONS:
Preheat oven to 325 degrees F (165 degrees C).
In a large saucepan, melt butter over low heat. Stir in the package of dressing mix. Blend in wine and golden mushroom soup. Mix in cream cheese, and stir until smooth. Heat through, but do not boil. Arrange chicken breasts in a single layer in a 9x13 inch baking dish. Pour sauce over.
Bake for 60 minutes in the preheated oven. Twenty minutes before the chicken is done, bring a large pot of lightly salted water to a rolling boil. Cook pasta until al dente, about 5 minutes. Drain. Serve chicken and sauce over pasta.

I like to cook chicken using onions, green/red peppers...salt/pepper, and Mrs. Dash makes some excellent no sodium seasonings....you'd be surprised at how much flavor you get from the onion.
Normally I sautee the onion in a little margarine (or margarine substitute) before I add the chicken (which i cut into pieces) then the peppers last because they cook fast.
Put it over rice, in a tortilla, or if you're not doing carbs, just add veggies on the side. Topping it with cheese is optional too, or avocado...Im full of ideas today.
Don't know much about south beach diet, but HTH.

DH makes chicken wings and they are great. He fiddles with the ingredients, doesn't measure much. He lays the thawed wings out in a large baking pan. He pours vinegar and Louisianna Hot Sauce over them. Then he pours a little melted butter or olive oil over them. He salts them and sprinkles a lot of Splenda on them. He bakes for about 45 minutes at 500 degrees and then turns them. He adds more vinegar and more splenda and puts them back in for about 30 to 45 minutes. They are great!
there is a marinade i buy i get it at kroger here in arkansas but havent seen it in wal-mart...it is called EZ marinader ...My friends and i particulary enjoy the teryaki flavored one. you just put the chicken in the marinade bag in your fridge for the alloted amount of time and then grill or bake it. it is so mega easy...we personally love it grilled...make it with some uncle bens brown rice - heaven....we have people request this when they eat with us:-) hope you found the answers you are looking for.

If anyone is still interested.... I came up with a good stuffed chicken breast recipe not too long ago.
You take a thick cut whole boneless/skinless breast and grill it just for a few minutes until the outsides are white and the inside is still just a little pink. Then you cut one side of the breast and stuff with 2 tbsp of this mixture:
1 cup of crushed cheese and garlic croutons (lower in carbs than stuffing or bread crumbs)
2 tbsp virgin olive oil
1 crushed garlic clove
And whatever seasonings you like.. I used basil and onion powder
Then you stuff some shredded low-fat mozzarella in as well...
I baked them in a shallow sauce pan with about 1 cup of tomato sauce in the pan to lock in moisture. I also sprinkled some more mozzarella cheese on top. It turned out SO good, my husband asked for it again the other day!
