Default any yummy recipes for cottage cheese?

So i've finally gave in and bought some cottage cheese (don't know why, but i've always associated it with dieting?) and now i'm now sure what yummy foods i can make with it???

So far i've only spread it on whole wheat bread + lettuce + tomato + cold meat and it's suprisingly yummy.... But i'm stuck!!! What ELSE can i do with cottage cheese with regards to lunch/snacks??

hi

Im sure someone asked a while back about different types of cottage cheese eg with pineapple , etc.
I usually just have it with salad, or in sandwhich like you said. Be interesting to see what other people do.......

I just saw a recipe for cottage cheese pancakes :

Top these tasty cottage-cheese pancakes with a bit of jam and some whipped cream.

Cottage-Cheese Pancakes

Ingredients:

6 eggs
1 cup small-curd cottage cheese
4 Tbs. vegetable oil
1/2 cup flour
1 tsp. salt
1/2 tsp. baking powder

Preparation:

Blend all ingredients until smooth. Measure out the mixture and fry just like ordinary pancakes.

Sounds yummy and easy ~ i might try this over the weekend ...

I just bought some cottage cheese too, but I really like it. My favorite thing to do is cut up tomatoes in it, but for me metformin and tomatoes don't mix. Many people like fruit in their cottage cheese, but I've never been a big fan of that. I like it plain, or like I said with tomatoes!! I've never thought of using it as a sandwich spread before.....

This may sound weird but what I do is take cottage cheese with cut up tomatoes and cucumbers and squeeze lemon on it and sprinkle a little bit it salt on it. Makes a good side to a small sandwhich for lunch. My family thinks I crazy for liking it, but hey gotta try things at least once.

I love to mix in no-sugar added jelly or jam into cottage cheese (especially strawberry) and eat it with a salad and whole wheat crackers

Slice pineapple and put cottage cheese and one cherry on top.

I just posted a recipe on the Breakfast thread for a cottage cheese / oatmeal pancake recipe that is low-fat and low-carb that came from the South Beach Diet cookbook. It is similar to the one here but with eggbeaters and oatmeal in it.

They are yummy.

Cottage cheese pureed in the blender can make a good substitute for mayo or sour cream in things like dips and salad dressing. I also like it mixed into Mexican flavored casseroles to add a creamy texture.

My mom used to put onion and garlic powder, parsley, and whatever else she liked from the spice cupboard on top. I didn't like it when I was a kid, but it's pretty good now. For me she'd put canned fruit (high in carbs, *sigh*) on top. mmm.

Jello salad..
Package of sf orange jello, 2 cups of cottage cheese, 2 cups of cool whip, 1-2 small cans of mandarine oranges. Mix by hand the cool whip with dry jello, fold in the cottage cheese.. add more if you'd like then fold in the mandarine oranges. Decorate top with the few oranges you had set aside. YUM

Default Protein pancakes

I am a big fan of increasing protein while lowering carbs: my sister gave me this recipe which i personally feel sounds disgusting but actually is very palate pleasing

3 egg whites
1/2 cup oatmeal
around 1/3 cup cottage cheese
a touch of vanilla

blend all in a blender, pour into skillet, top with blueberries (etc.) if desired and cook like a pancake...when done, I top with a couple tsp. of syrup mixed with some strawberry preserve.

try it...bet you'll be surprised!

Default cottage cheese receipe

Hi,
This is a good receipe with cottage cheese that is actually a dessert!( and it is good!)

1 large tub of Cool Whip
8 oz tub of cottage cheese
1 can mandarin oranges (drained)
1/2 package orange jello, dry. (regular)
or park light diet jello

Combine ingredient with a mixer
Reserving a few orange sections to put on the top.
(mix well to smooth the cottage cheese)

Refrigerate.
Can serve with cream.

It is good and non fatting! (got to love that!)

I love adding cottage cheese to my whole wheat pasta with tomato sauce. Sounds a bit weird but it's delicious!
