DIRECTIONS
Process the oatmeal, cottage cheese, egg whites, vanilla extract, cinnamon, and nutmeg in a blender until smooth.
Spray a nonstick skillet with cooking spray. Add the batter and cook over medium heat until both sides are lightly browned.
These pancakes are soooo good. They are so close to my mom's homemade buttermilk ones. I eat them EVERYDAY!! I have changed the recipe a tad....I use 2 whole eggs instead of 4 egg whites (I hate wasting food). Plus I've skipped the cinnamon and nutmeg. You can add things too....blueberries, chocolate chips, cocoa, banana, all-fruit jam, etc.
I found it at allrecipes.com. there's a ton of reviews and ideas that other people have changed too. If you do a search they are called "Oatmeal Pancake" (no "S" at the end of pancake). ENJOY!

i would consider this recipe as a single serving. Sometimes I add a splash of milk and then it makes about 3-4 pretty good size pancakes. Recipe as is makes 2-3 big pancakes. I also cook them on an electric griddle. it's so much easier.
