Default Bacon wrapped chicken

Just tried this recipe the other day, and thought I'd pass it along.

Bacon Wrapped Chicken
4 boneless skinless chicken breasts
4 oz. cream cheese
herb of your choice (chives, tarragon, sage, etc.)
8 slices bacon
salt and pepper to taste
1 to 1 1/2 tbsp oil or butter (melted)


Preheat oven to 385. Wash chicken and cut off any fat, then make a pouch in the chicken by cutting a slit from side to side, being careful not to cut it compleley in half.

Mix together the cream cheese and herbs. Divide this mixture equally and place each portion into the pouch in the chicken. Press the pouch back together to keep the cream cheese inside.

Wrap each chicken breast with 2 slices of bacon.

Place in a greased baking dish and sprinkle salt and pepper on top. Drizzle with oil or butter and cook for 45-60 or until chicken is done.

This recipe didn't come with any nutritional info, but it's everything I eat on my low carb diet. Probably the best respond I've gotten on a meal from my non dieting family members in a long time as well.

This sounds like a real dumb @$$ question, but do you cook the bacon first?

No, you just wrap the uncooked bacon around the chicken, and it cooks in the oven. I really don't think it would wrap around the chicken and stay in place if you cook it ahead of time.

I used turkey bacon, because that's what I had. When cooked in the oven, it did get cooked, but it wasn't really crispy like it is when you cook it as normal, because the back of the strip is facing the chicken. However, it is okay to eat because it's crisp on top, and it is done.

And no, you aren't dumb. I had to read the directions twice to gather whether to cook it too.

OMG!!!!!!!!! I made this last night for supper, and it was soooooo good! I used green onions in the cheese mixture as well as adding a bit of parmesan cheese to the cream cheese! And the last 15 minutes of cooking I added sliced fresh mushrooms to the pan mmmmmmmmmmmmm My hubby loved it!

OMG! I made this today and it is to die for. I used chives in the cream cheese and a little garlic. It was so delicious. Thanks for the recipe. By the way DH, and DD even liked it.

I made it last night and it was really good! Dh suggested some montery jack cheese with the cream cheese. I also used the chives.

I tried this recipe also. I just put seasonings in the cream cheese because I was afraid to try anything else. lol I cooked cauliflower and brussel sprouts in the pan with it and a couple minutes before pulling it out added some cheese to the top. Yum!!

I made this last night and was not too please with the end result. I cooked it at the said temp for 1 hour. The bacon was still very soft, and looked under cooked. DH and I did not want to eat raw looking bacon. I then turned the oven up higher and turned the chicken over. I baked it for about a half hour longer. The bacon then looked cooked and done.

After cooking it longer, the result was pretty good. I didn't think that the cream cheese did much for it. I'm going to try something simlar next weekend but using a different kind of cheese (pepperjack maybe).

I have tryed this a few more times and each time it gets better. Tonight I made it with swiss cheese in it and it was great!!

Thanks for the great recipe .It sounds delicious! I found a similar one with hidden valley ranch seasoning packet, chicken,cheese, and bacon on pcos.net, there are some good recipes there also.
