Default Baked cinnamon apples?

Anyone have a good recipe for this that is low G.I.? Similar to apple crisp?

I've had a major craving for that lately.

Thanks!

I use oats instead of white flour to make some desserts. If you buy a small food grinder you can make oat flour from basic quick oats. I have not found any good low GI substittue for brown sugar, but Splenda works well to sweeten most desserts.

Splenda makes a brown sugar substitute that is 1/2 Splenda and 1/2 brown sugar... and you only use 1/2 for what the recipe calls for. It isn't the greatest for us, but at least you are only getting 1/4 of the sugar intake. I haven't been able to find any other brown sugar substitutes, but I know they are out there somewhere.

Oh yeah, duh! Oats. Maybe sprinkle a teaspoon of that splenda brown sugar with my apples and cinnamon, and then sprinkle oats over the top, unprocessed though (low GI that way). I guess I could also add slivers of my fake margarine over the top to 'crisp' it. Any suggestions other than that to getting the crispness on top w/o the fat in margarine/butter?

How about one of the "I can't believe it's not butter" sprays? You could just spray a tiny bit on top. I think they make another non-fat brand of spray butter too?
