Default Baked Tostitoes & bean dip?

I'm getting ready to start the low GI diet & I can't find Baked Tostitoes anywhere. Anyone know if I'll be allowed Baked Tosts & Trader Joe's spicy black bean dip? It's the one thing I'm just not sure I can live without....

Please don't hate me I think they are a corn product, and corn has a very high GI rating. Depending on which chart you use, corn chips have a GI rating of like 72 and corn flakes (cereal) is around 80. I've read that pairing high GI foods with a protein, like bean dip, does somewhat decrease the GI rating of the whole snack. If you wanted you could use broccoli or celery instead of chips and that wouldn't be high GI at all though!

I don't hate you. I was afraid of that, but you can have corn tortillas some times. They have a GI of 52.

But there is no way broccoli will work. NO WAY. It's my "I'm not really dieting, I'm not really sick, I'm just normal" food. Broccoli would turn it into yet another diet food. Ya know?

Maybe whole wheat tortillas cut into triangles and baked till crisp? They have a GI of 30.

When I was doing atkins I ran across a recipe for low GI tortilla chips that looked good... I think you had to use unflavoured whey protein powder, wheat bran, and ground almonds to make them. They may have had pumpkin seeds in them as well.

You'd be surprised what you can fake -- with ground almonds you can make fairly convincing cakes and cookies and mixing eggs with protein powder made a good pancake batter... not quite the same but by that time I was desparate for something that wasn't meat, cheese, or salad.

WHEW! Good! I never thought about cutting tortillas up and baking them, I do have some "low-carb" tortillas at home that I might try that with for my husband. They're even salsa-flavored! Mmmm... I might have to try just one... lol

I cut whole wheat tortillias up and deep fry them. It's a great lower carb snack, but they don't store well IMO. I only make enough for one meal.

Make sure you watch out for the saturated and trans fats in store bought bean dip. Usually it is rather high in fat, and it won't do much for ya weight-wise, even if it is technically low GI. Maybe try experimenting and make your own.

I can't imagine Trader Joes has any trans fats as it's fat free & two tablespoons of it isn't even a point on W.W. So if it has any at all it has to be trace enough to not be listed on the label. That's why I love it sooooo much. It's always felt like a "free" yet delicious food.

And if you take a jar & mix it with fat free cream cheese and bake it, top with cilantro, it's elegant enough to serve to guests!

I've made my own before as I live 1.5 hours away from Trader Joes & so can't always get theirs and it's good too, but nothing is as good as my yummy pre-made dip.

I wonder if any of you ever eat the vegetable chips? Are those low GI? Cause I bet they would good in it.

The thing is, I take this particular treat to parties to keep myself from going crazy at the potlucks, so that is another reason premade & portable are so important to me.

The sweet potato chips are lower carb, but a lot of the veggie chips have potato or white flour or sugar added in.
