I would die if I had to give up bananas. You can eat them so long as you balance with protein. (I usually have them with milk products). I will post an IR recipe for banana nut bread when I get home from work today.
3 ripe bananas
juice of one lemon (optional)
1/3 cup oil or butter
1/2 cup brown sugar
1 1/2 cups whole wheat flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup wheat germ (or more whole wheat flour)
1 cup nuts
Preheat oven to 375F. Mash bananas and mix them with lemon juice until smooth. Cream butter or oil and sugar together and add the banana mix, stirring well. Stir together flour, salt, baking powder, and baking soda. Mix in wheat germ. Add to the banana mix and stir in nuts if desired.
The dough will be very stiff. Turn into a greased loaf pan and bake for about 45 min. To test for doneness, insert a knife into the loaf: if it comes out clean, the bread is done. You can also make cupcakes (bake for about half an hour).
So it isn't something you want to eat a LOT of if you're IR (there *is* some sugar in it), but if you balance it with say, cream cheese, or have it after eating some meat, or what have you, it's fine. It's way way better for you than a lot of things out there that you could be eating (like campbell's soup with its added high fructose corn syrup, for example) and full of nutrients. It also doesn't make me feel jumpy. And you can always take a shot of apple cider vinegar before-hand if you're still worried.

great recipe! i just baked some, and it's delicious. it got an approval from 2 college guys who were in the dorm kitchen as I was taking the loaf out

Dr. Weil sends me recipes every day (Ok... not him personally, but you catch my drift) and the day before yesterday it was BANANA BREAD!!
Ingredients:
3 very ripe bananas
1/2 cup honey
3 tbsp canola oil, plus a little more for oiling the loaf pan
1 tsp pure vanilla extract
1 1/2 cups whole-wheat pastry flour
1 1/2 tsp baking soda
1/4 tsp salt
3/4 cup chopped walnuts or pecans
Instructions:
1. Heat the oven to 350 degrees. Lightly oil a loaf pan.
2. Mash the bananas and mix with the honey, canola oil and vanilla extract.
3. Stir together the whole wheat pastry flour, baking soda and salt. Add the nuts.
4. Blend the two mixtures and spoon into a lightly oiled loaf pan. Bake for 40 minutes, or until center is set.
