I think the problem with low-carb diets like Atkins diet for example is of course the lack of taste and you get tired of eating the same things over and over again. One thing I have learned about maintaining a healthy diet is to learn how to cook. This is the most important thing you'll have to do if you want to stay healthy. If all you know ( like I did before) is to put a frozen pizza in the oven, or cook a piece of chicken with a salad and have a sugar-free jello for desert then of course low-carbing will be hard! But fortunately there are great books out there if you do a bit of searching on amazon.com which give you lots of tasty low-carb recipes. The best book I have found is called "500 Low-Carb Recipes" By Dana Carpender. It is awesome!! You'll never think these are low carb because all the recipes are delicious. She even has low-carb recipes for chocolate mousse pie, chocolate-chip cookies, cheese cake etc. Low-carb dieting does not have to be boring trust me.

I have to say thank you for the idea. I just recently was told to follow a diabetic low carb diet and have been looking for cook books to help my roommates in cooking for me and for myself. I must say thank you to who ever sent me such great friends.

In case anyone is interested in adding another good cookbook, I'd suggest the one I received for my birthday. It's called " Lose Weight the Smart Low-Carb Way" by Bettina Newman, R.D. and David Joachin. I believe it's sponsored by Prevention Magazine.
I'll admit it is kind of pricey ($29.95 for a hardback in the U.S.), but it's over 350 pages. The first section discusses all aspects of low carbing, several success stories and helpful hints are scattered thoughout, along with the 200 recipes for all kinds of meals, snacks, appetizers, and desserts. What I especially liked about this one is that a lot of low carb books I find have more exotic, spicy foods, but this one had more normal "comfort" foods which have been modified to fit the low carb diet.
Now all I have to do is figure out what to make first......
500 Low Carb Recipes is an EXCELLENT cookbook. I found it in my health food store just the other day. I was feeling real humdrum and tired of the same ol'. There is an excellent meal in there. The spicy peanut chicken and Spicy Thai Cuke salad. Yummy!!!
Her recipes are absolutely wonderful and has given me a new lift to low carbing!

Are the recipes heavy on fake-food like Splenda, Nutrasweet?
Unfortunately, yes. Also, for all the baked goods she used flour substitutes like special bake mixes, Guar and Xanthan Gum, Psyllium Husks, rice protein powder, soy powder, whey protein powder, wheat gluten, and so on. I can't even get that stuff over here, apart from the fact that it would make baking really expensive.
So I don't use that section of the book. The meat recipes are fabulous though. (Though, come to think of it, pretty much most meat recipes are low-carb already b/c meat's the major ingredient...)
I use the recipes for new ideas, and I just cut down a lot on sides like potatoes and rice, of which I eat one serving at most. My favorite recipe so far is the Zucchini Meat Loaf Italiano. Yum!!
