Smile broccoli and cheese

This is probably a weird question, but when making a cheese sauce for broccoli, what type of cheese do you normally use? I used to use the cheez wiz stuff by velveeta because it melts so well. But I know that's processed and I'm not sure about the carb content, so I was wondering what others are using. Thanks!

I use cheddar. I make up a white sauce and add the shredded cheese. It is probley really high carb though because the roux has flour in it. I would just shred the cheese over the broccoli and zap it for 45 seconds or so in the microwave.

right after the broccoli is done microwaving i throw in a few slices of american cheese (it melts well) and cover it until it's melted.

try this...after you have steamed your broccoli add about 2 tablespoons of butter , 1/4 C ranch dressing and a handful of whatever cheese you want...I prefer cheddar. It makes a great sauce, works well on cauliflower too and very easy.
