I made Salmon-Farinetta Croquettes last night. I just made it up quickly and the 'recipe'' may not profected yet. Farinetta Croquettes * Exported from MasterCook * then edited Ingredients:
1 14.5 oz can wild, red salmon-- water packed or use fresh cooked
½ cup onion -- diced
½ cup celery -- diced
½ teaspoon salt -- or to taste
½ teaspoon pepper -- or to taste
1 whole egg
1 cup buckwheat farinatta
1 teaspoon baking powder -- (could likely use less if sodium sensitive)
Directions:
Preheat oven to 400 grease/oil a baking dish
drain excess water off of salmon
Combine salmon, onion, celery, spices and eggs in a large bowl
Combine well, farinatta and baking powder in a separate bowl then add to other ingredients
Use a spoon then your hands to mix and form a ball divide into 12 patties
Place in greased baking dish and bake for 30-40 minutes (I really do not remeber the cooking time - flipping once is optional for more even cooking) - I set the oven to broil for the last few minutes to brown tops and watched for burning.

Since I baked instead of frying or sauteing, they turned out more like small salmon burger patties than true croquettes - it was easier and healthier, I think - but you might want to experiment with coating the outsides with more farinetta or toated bread crumbs and different cooking methods. Also with the baking method they likely need some sort of condiment like horseradish, tarter sauce, dark mustard, mayonnaise, anchovy–mayonnaise, ketchup, cocktail sauces, wasabi etc.. If you make Farinetta Croquettes based loosely on this and come up with an improvement, please let me know!
