My favorite is diet cream soda with anything! Chocolate, lemon, etc.

The cake is super moist and crumbly, so works well for a 9x13 or cupcakes, not so good for bundt or layer cakes.

Top with Cool Whip free for topping with almost no calories. You can use food coloring to color, then sprinkles or whatever...

Another variation is using pumpkin. Spice cake mixed with a can of pumpkin is yummy!

Another person mortified this is encouraged at a weight loss facility. box of cake.. sugar and calories and junk plus add fake sugar and a buttload of chemicals from a soda. Sounds gross.

I HAVE heard of adding pudding to a cake mix for a moister cake but this is a diet forum so how about a low calorie angel food cake with a plain fruit topping if you HAVE to splurge (which this is still splurging and encouraging your sugar tasters to go get more sugar imo).

Pumpkin with chocolate cake mix is also delish! The batter is really thick so it helps to add just a little bit of water.

okay so i've made this kind of cake in the past but i'm not big on eating cake so my family ate it. heard it was good dont really know for myself. It suprised me that this was discussed at a weight watchers meeting. kinda odd. to each their own I suppose.

Definitely sounds like something I might try for special occasions, etc...
BUT I agree w/ some of the others. But I'm not surprised it was brought up at a WW meetings. WW is great at helping women reduce their caloric intake and make better choices. I will definitely give them props for that. But as far as eating truly "nutritional", they have WAY too many processed foods on the market to earn points with me.
However, what I would like to know, is why anyone would consider baking with something that contains Aspartame. Its very very heat sensitive and can turn into a toxic chemical when heated too high. Like, you should never drink a diet coke left in the car on a hot day for a couple of hours. I would feel comfortable about trying this with a Diet soft drink that contains only splenda, but never nutrasweet/aspartame.

If you're looking for treats to satisfy a craving for a desert, here are a few options for you. They are higher in calories so a small piece is best but they are very filling because of the nuts so a small piece will certainly satisfy. The best part is they contain only natural ingredients including only naturally occurring sugars from the dates and in the fruit and are gluten and dairy free.



PUMPKIN PIE
Crust
Combine in a blender:
1 cup almonds
6 dates
1.5 Tbsp walnut oil
pinch of salt
Lightly oil the pie plate, so it doesn't stick. Pulse until combined and uniformly chopped. Press into a pie plate. (Don't need to bake the crust separately…it just bakes at the same time as the filling)



Filling
• 3 1/2 C pumpkin puree *note…make sure it's NOT pumkin pie filling
• 1/2 C unsweetened applesauce
• 2 eggs
• 2 Tbsp ground almonds
• 1/2 tsp each of ginger, cloves, cinnamon, allspice, and nutmeg
• 1/2 cup pecans




Combine all of the ingredients except the pecans in a bowl, mix well. Pour into crust. Rim the outside of the pie with pecans to make it look like a crust. Bake at 350 degrees for 45 minutes. Chill before serving.


*note – that amount of filling actually makes enough for 2 pies. So I just double the crust recipe. Or you could just bake the filling in a casserole and have a crustless dessert!


Banana-Rama
1.Cover a peeled banana in your favourite nut butter (hazelnut or almond are both lovely) and roll in unsweetened coconut. If you want a bit of chocolate, you can mix in a tbsp of unsweetened cocoa powder into the coconut.

2.Freeze (1/2 hour or so….any longer and you'll have to let it defrost a bit before eating)
3.Enjoy!

COCOA-APPLE PIE


CRUST
2 large eggs
1 cup hazelnut flour
1/2 cup coconut flour
FILLING
1 cup almond flour
2 large egg
4 dates, chopped
2 Tbsp unsweetened cocoa
TOP
1 apple
(water, lemon juice to soak them in while preparing)


1. Mix the crust and press into pie plate (I oiled it, so not to stick). Cook in oven at 325 for 10 mins. It will cook more with the filling. To make nut and coconut flours, use a food processor or grinder (I use my coffee grinder) to pulse nuts and coconut into a fine powder.



2. Prepare the filling while the crust bakes


3. Peel the apple into THIN slices, then place in bowl with water and lemon juice till later (I never put my apples in this…I sliced them right before I put them on the pie)


4. Spread the filling into the crust, then decorate the top with apple slices
Place back in oven at 325 for another 10-15 minutes


I'd love to take credit for these but they were developed by other folks at CrossFit Regina who are whizzes in the kitchen.

Those look super yummy! The pumpkin pie one, I will definitely try this Thanksgiving! It looks very fiber rich too.

The pumpkin pie was freaking spectacular. Hardcore Ang brought it to our gym's potluck and it went FAST. So delicious. I thought it was better than regular pumpkin pie. The nuts added a really nice texture and richness and between the dates and the spices, it was highly flavourful without being too sweet.

Yeah I want to know this, too. Doesn't it turn out disgusting?

When I was younger and anorexic and insane I came up with this great idea to flavor diet pepsi. I put tic-tacs in it and put it in the microwave. Yes that sounds foul - and it was. Totally horrible. I'm surprised baking with diet pop works out at all unless you use splenda?
