I have a ton of tomatoes and would love to make a big batch of salsa and some spaguetti sauce, but I have no canning "stuff" to can with. Can I freeze either?

you can freeze them with skin on and then run under warm water to pop skins off...no need for fancy bags imo, target bags will do. only good for cooking, though..not salad!
doy, just re-read your op...any tomato sauce or salsa freezes well ime.
YES u can freeze tomatoes...We put them on a cookie sheet then freeze them well then we put them in the bags and seal them with our black and decker sealer.They freeze rather well!

Yes, you can make up the sauce or the salsa and freeze in ziplock freezer containers (or some other brand), or you can wash, dry, and freeze just the tomatoes (they'll only be good in stews, soups, etc.)

I chop mine up, put them in ziploc baggies and throw them in the freezer they are great to add to chicken breat, stew or whatever. works great!

Salsa's one of those foods that's difficult to mess up-- different ingredients in different amounts just result in a different kind of salsa.
I dice tomatoes, then add chili powder to taste, raw garlic (optional for bite), little bits of onion (vidalia for sweet, yellow or white for sharp, green or chives for mild), fresh cilantro if I have it (start with a little and add more to taste) and garlic salt, maybe some ground pepper. That's really it. You can blend it if you like your salsa more liquidy than chunky. If you're daring, add rutebega, radishes, or other random veggies. Cumin, paprika and/or oregano will give some depth. Cayenne will make it spicy.
The basics of salsa, along with the tomatoes of course, are onion, peppers, chiles (even if you don't want it hot, you want a bit of zip), cilantro (if you like it) and often a little lime juice, plus salt. Beyond that you can add whatever you want. And it can be as chunky or smooth as you like.
Try Google for some recipes. I'm sure there's tonnes. Heck, just for fun I typed in www.salsarecipes.com and got a site that links to recipes elsewhere.

Thank you all for the salsa info! I made a huge bowl of it today....kind of a pain without a food processor...I chopped about 20 tomatoes by hand!! I added black olives and corn to mine, plus spices and green and red peppers from my garden and chopped yellow onion....I need to still borrow some cumin and chili powder and cilantro from my neighbor when she gets home to finish it off....I'll letcha know how it tastes!!

I have a great recipe for Pico de gallo....i like it better than salsa cause it's fresh and tasty.
Tomatoes (whatever floats your boat)
Onions
Garlic
salt and pepper
jalapeno (use one usually)
cilantro
lime juice
lime zest
Chop up the veggies and herb and put it all together. It ROCKS.....makes my mouth water thinking about it. The lime juice really brings out the flavor!
I'd have to omit the garlic though....it makes me sick...which I found out AFTER I made a huge batch of salsa!

Do you cook your tomatoes before you chop them up or just out of garden - wash - chop and into baggies? I got a truckload from the neighbor lady and would rather do a quick freeze thing than the cooking, peeling and then freezing.
