Default carb friendly "mashed potatoes"

Does anyone have an easy recipie for "mashed potatoes" made out of cauliflower instead of potatoes?

Yes!

I've boiled the heck out of cauliflower and mashed it up, added a little salt, pepper, chives, and a little milk.

My mom adds cream cheese instead of milk.

Neither recipes tastes exactly like mashed potatoes, but I don't mind them (I like plain steamed cauliflower). The ones with cream cheese are definitely creamier and have more of a mashed potato consistency, but the downside is that they have more fat.

Oh. . .and this may be TMI. . .but this can be a really gassy food!

Correction. . .my mom makes it by mashing the cauliflower and adding 4-6 oz of LIGHT cream cheese and a little chives. She said that she sometimes adds a little garlic if she feels like it.

As a left-over variation, she sprinkles cheddar cheese on top.

I steam cauliflower then mash and mix with 1 or 2 wedges of laughing cow light (any flavor), depending on how much cauliflower I made, a big tbs of light sour cream and salt and pepper. This is delicious.

I would definitly steam the cauliflower so it retains any nutients! I have done this on a low carb diet and it tastes great!

South Beach diet style:

NGREDIENTS

* 4 cups cauliflower florets
* 1 ounce butter flavored cooking spray (like I can't believe it's not butter)
* 1 fluid ounce fat-free half-and-half (skim milk is a good sub)
* Pinch salt
* Pinch freshly ground black pepper

DIRECTIONS

Steam or microwave the cauliflower until soft. Puree in a food processor, adding the butter spray and the half-and-half to taste. Season with salt and pepper.

You could also steam the cauliflower on the stove top -- steaming preserves more nutrients than boiling.

We don't measure the amounts any more... and have tried it with both fresh and frozen cauliflower.

Thanks for the recipes everyone. Mindijean - I will have to try that cauliflower mac and cheese, do you have the recipe for that? This is all very experimental for me lol. Day 2 on the IR diet!

WAYYYY too much fat in this recipe, but it can be cut down with lower fat/nonfat cream cheese and other cheeses, and a lower fat cream.

Mockafoni & Cheese

1 bag frozen cauliflower, cooked
3 oz cream cheese
2 T heavy cream
1 cup shredded cheddar

Preheat oven 350. Pour little cream in bottom of baking dish and add handful of cheddar. Place cream, cream cheese and remaining cheese in microwave safe dish and microwave until all can be stirred together easily. Pour drained cauliflower into baking dish (while cauliflower still hot). Pour cheese mixture over and stir well to mix. Sprinkle some Parmesan over top. Bake 35 min; allow to stand few minutes.

Total: 20 carb, 10 fiber (10 NET carbs), 963 Calories, 76 fat, 45 protein. Serves 2 as main dish and 4 as side dish

I've used non-fat cream cheese and non or lowfat cheddar cheese before, with a splash of milk instead of heavy cream. It tastes just as yummy!
