Does anyone have any healthy, chicken casserole recipes? Everything I've looked at seems so full of fat. I'm looking for something I can make simply and easily, but something that's going to be a fairly complete meal (with a salad on the side). It can even have rice in it (I'll just use brown or wild).

Here's mine. It's what we're having for dinner tonight. High in protein.
Rosemary Chicken.
2 large Costco or 4 small chicken breasts (these are the ones you buy at the regular grocery store) - cooked and cut up into bite sized pieces
1 can Great Northern Beans drained and rinsed
Carrots to your liking - sliced
Celery to your liking - sliced
1 small onion sliced
Rosemary to taste (I usually put in two good sized pinches)
salt and pepper to taste
2 cups chicken broth (low salt low fat if you prefer)
2 cups cooked brown rice to serve it on
In good sized casserole dish, mix all ingredients (except rice obviously) and bake at 400 for an hour. If you're feeling adventurous throw in some white wine. When I serve it I just strain off the broth. If you don't like rosemary, you could always try whatever herb you like. I use a lot of veggies.

(I know it doesn't sound too great but it's pretty good. My daughter has lots of food sensitivities and I'm nursing so I can't have dairy, soy, wheat or eggs and finding recipes is just plain DIFFICULT!)

Liz: Your recipe sounds good. I'm wondering if I could double the broth and throw everything in the crockpot raw to cook together? Chicken for a while, then add everything else? I'm going to try it and let you know. Thanks.

I made this with beef, but you could substitute ground turkey.
Cabbage Ground Beef Skillet
1 pound ground beef
1/2 cup chopped onion
1/2 cup cabbage, chopped, 1/2 head
1 cup long-grained raw rice
15 ounce can tomato sauce
6 ounce can tomato paste
2 cups water
1 1/2 teaspoons salt
1/2 teaspoon thyme
1 bay leaf
Brown ground beef in electric skillet. Stir to break up. Add onion, green pepper, cabbage and rice. Stir in tomato sauce, tomato paste or puree, water and seasonings. Heat to boiling; reduce heat to a simmer. Cover and simmer for 25 minutes until rice is tender, stirring occasionally and adding more water if necessary.
Serves 4.
THE FLAVOR IS SO GREAT!!! The rice does take way more time to cook.

New to this PCOS and dieting...these recipes contain rice --- which is carbs right? Can we have that?
Just curious, I am just starting out and I thought I wasn't allowed - rice, potatoes, bread, pasta, corn
Well, there are a lot of us here (I'm one!) who don't do the low-carb diet. So if you're trying to low-carb, then rice wouldn't be the best, but if you're not you should be fine.

I love this low carb recipe:
Stuffed Pepper recipe
Take a fying pan, add oil and add one diced onion and some garlic. After a bit add in a couple cut up mushrooms and three diced tomatoes. After ten minutes or so, take off the flame and put it in a bowl. Add 3/4 cup of parmasean cheese and 1/2-1 cup of mozeralla. The heat should make the chees melt into the batter.
Apart from that step..........Get 6 red/yellow peppers. Cut the top off and clean them out. blanch the peppers until they are a bit soft. Dry them out. Stuff the mixture into half of the pepper. (It is supposed to be full b/c the original recipe calls for a cup of rice to be added to the mix but rice is not low carb. Add it if you want...it is better that way) Then stick the peppers into a baking dish and heat for 10- 20 minutes at 300. Delicious

I was recently diagnosed by an RE, and he put me on met as well as a low carb diet. I've only been on it 13 days, but I've lost about 8 lbs, and the bad symptoms are getting better! Susan Sommers has several books out and I think her diet is awesome for someone suffering from pcos. She allows carbs (only good ones), but is very careful with combining fats and carbs. I would suggest it to anyone. I feel like it is still healthy, and I'm still getting nutrients I need for when I become pregnant. Also-she shares tons of great recipes!

I've got this recipe for Chicken enchiladas but I make it in casserole form..less carbs.
Bake chicken, cut into pieces mix in sour cream and salsa to your liking. Cut up soft taco or burrito shells..I do it with a pizza cutter and add to it. Mix and top with cheese and heat at 350 for about 20 minutes or until cheese is melted. High on protein, salsa is very good for you..could even use green salsa, add anything else you like..I add green onions too sometimes. The sour cream and salsa mixture is super tasty. If you want to make "enchiladas" you just dip the shell in the mixture and add cheese and meat to the inside. You can even have a side of beans with salsa in them or cheese and still good for you! I make this in casserole form because I can use less tortilla shells since my hubby is also diabetic. When I was preg. and had gestational diabetes I made this and with the protein from the beans It didn't cause my blood sugar to go up.
