Default Cauliflower Popcorn

Cauliflower Popcorn


Ingredients:
1 head of cauliflower
3 Tbsp. (45mL) olive oil
2 Tbsp. (30mL) Mrs. Dash® Table Blend

Serves: 8
Prep Time: 10 min
Cook Time: 55 min to 1 hr


Instructions:

1. Preheat oven to 450°F (220°C).

2. Cut out and discard cauliflower core and thick stems. Trim remaining cauliflower into florets the size of popcorn.

3. Toss thoroughly in a bowl with olive oil and Mrs. Dash® Table Blend.

4. Spread cauliflower on a sheet pan and roast for approximately 60 minutes, or until nicely browned (that's the carmelization process converting the dormant natural sugars into sweetness).

5. Turn three or four times during roasting. The browner the florets, the sweeter they will taste. Serve immediately.

No, I haven't tried it, but I read about it on another board and a couple of people had tried it and really liked it.

roasted cauliflower is the best, it becomes sweet and so delicious. although it only takes 30 min at 450 degrees in my oven so I would watch it carefully.

i love cauliflower too! might try this one out.
apart from as raw dippers, I also like it roasted with tinned tomatos, kidney beans and chicken.

Might be a stupid question here, but does the cauliflower get crunchy like popcorn or do you eat it with a fork? If it gets sweet, could you put something else on it, like Cinnamon or something? I'm willing to try just about anything....once. lol Adding cauliflower to my grocery list.....
