Default Cheddar Baked Chicken

Here's a new recipe that I tried tonight.

Cheddar Baked Chicken

4 skinless bonless chicken breasts
2 Tbsp mustard of your choice
1 Tbsp milk
seasonings of your choice (The recipe called for chives, but I used tarragon and it turned out well)
3 Tbsp flour
A little butter or olive oil
1 cup shredded cheddar cheese

Mix the mustard, milk, and seasonings together in a small bowl. Put the flour and maybe some extra seasonings in a shallow bowl.

Rub or brush the mustard mixture onto the chicken and dip it into the flour to coat. Place in a greased baking dish and drizzle with a little butter or olive oil (just enough so the chicken won't dry out). Cook in a 375 degree preheated oven. Bake to your desired tenderness. It took about 40 minutes in my oven.

Right before chicken is completely done, take the dish out of the oven and sprinkle the cheese on top of each chicken breast. Put it back in the oven just long enough for the cheese to melt on top.

This recipe has 30g of protein and 9g of carbs.

Hm...

You might also be able to lower the carb content a bit by replacing flour with ground pistachios.

The recipe came from a book of chicken recipes, not a "all low carb" book, and they recommended a green salad and a baked potato. Of course, baked potatoes are a thing of my past unless it's a special occassion. I've only made the recipe once, but I can't remember what I served. We always kind of rotate our side dishes from a side tossed salad, green beans, broccoli, or some sort of beans for the most part. However, if your diet allows you to have sweet potatoes, you could substitue that for the suggested baked potato.
