Default Cheri's Creamy Southwestern Taco Soup...YUM!

Okay, here is our "low-carb" dinner for tonight:



CHERI'S CREAMY SOUTHWESTERN TACO SOUP
1 pound ground beef
2 3/4 ounces onion, chopped, 1/2 cup
2 cloves garlic, minced
1 tablespoon cumin
1 teaspoon chili powder
8 ounces cream cheese, softened
2 10-ounce cans Ro-tel tomatoes, undrained (tomatoes with green chilies)
2 cans beef broth
1/2 cup heavy cream
2 teaspoons salt, or to taste

In a large soup pot, brown the ground beef with the onion and garlic; drain. Add the spices and cook a couple minutes. Drop the cream cheese in bits into the meat. With the back of a big spoon, smash it into the meat until no bits of white remain. Stir in remaining ingredients and heat through.

Makes 8 cups or 6-8 servings

Per 1/6 Recipe: 361 Calories; 29g Fat; 18g Protein; 7g Carbohydrate; 1g Dietary Fiber; 6g Net Carbs
Per 1/8 Recipe: 271 Calories; 22g Fat; 13g Protein; 5g Carbohydrate; 1g Dietary Fiber; 4g Net Carbs

This soup is very good, quick and easy to make and has a bit of a kick from the Ro-tel tomatoes. I didn't time it, but I'd guess that this soup only takes about 15 minutes at the most to make.

The only things I changed was that I added about double the meat. (We buy the family packs and Matt freezes them into larger than one pound hunks so I used probably around two pounds in this recipe.) I also used one can "mild" and one can "original" Rotel. All the other ingredients remained the same.

Hey, if you have a printer, you can highlight it, go to your print menu and tell it to print "selection". That will save writing it down...which can be a drag.

I've printed it out! Thanks. Let us know if the soup is good the second day (most soups are just as good, or even better then, as we all know!)

This would be awesome with cheese quesadillas or tortilla chips on the side, if you can have the carbs.

Yes, it was even better today, except that it was a little more spicy. (cough, cough)

We thought about putting a whole grain tortillia in the oven and crisping it up to use in the soup, but forgot about it when the time came to eat. It was still good!!

Kat -

Thank you for the recipe - it looks great!! Another idea instead of the whole grain tortilla would be a corn tortilla - I know that these crisp well in the oven. I cut them into wedges and bake them in the oven (350) on a stoneware pan for about 10 minutes. Not sure how long - I just keep an eye on them. I did this because I wanted something crunchy with my chili the other night that didn't have the fat or salt of chips. This definitely did the trick and I had my kids stealing them off my plate. I really didn't think that they would like them because I didn't add salt, but I was wrong.

Anyway - just a thought. Thanks again for the recipe.

Hi Ladies

I made a modified version of the soup for dinner and really liked it - kids didn't care for it much though.

I used turkey instead of beef and didn't have the rotel so just used tomatoes. I cut some corn tortillas into strips and baked them in the oven to crisp them and they were good on top of the soup. I am doing the IR diet, so I used lowfat cream cheese and 1% milk and I also added some rice. I know - hardly the same recipe, bugt it was really good. Thanks again for the recipe.

Kath,

I also made the soup tonight! I used fat free half and half instead of the cream and when it all came to a boil I added 1 cup of uncooked Barilla Plus Elbow pasta (this is the new multi-grain pasta that also has 10 grams of protein per serving) and cooked it for another 15 minutes. It was AWSOME!!!

Will definitely be making this again. Next time I want to add black beans instead of the pasta.
