Chicken Fajita Casserole This is my favorite new dish that I made up and wanted to share. It's IR Diet-friendly, South Beach (low glycemic) Diet friendly, Weight Watcher points friendly, and Atkins (OWL) friendly, too! (Those on Atkins may want to substitute regular cheese and use oil instead of Pam):
Chicken Fajita Casserole
Ingredients:
1/2 c Southwestern Flavor Chicken Strips (made by Louis Rich; these are precooked, ready to eat)
1/2 c low fat or fat free shredded cheddar cheese (I like to mix the lower fat version, which is made with 2% milk and has extra calcium, with the fat free one)
1 green pepper, diced
1/2 large yellow onion, diced
2 low-carb tortillas (I like the Mission brand, because they don't have soy; they are 5 net carb grams each)

Directions:
Preheat oven to 350 degrees
Spray a nonstick fry pan with Pam and cook the green pepper and onion until soft; add the chicken and cook for a few minutes more, stirring often.
Spray casserole dish with Pam. Put 1 tortilla at bottom, top with half the chicken/veggies and half the cheese. Layer another tortilla on top of that; top with the rest of the chicken/veggies and cheese.
Cook in oven for 15-20 minutes.
Top with salsa (you could add fat free or regular sour cream, if desired, but I don't) and enjoy!
