What to do with chicken.. Does anyone have any simple/(or not, b/c it's good) recipes? What are your favorites?

and for something more experimental, why not try Jamie Oliver - we love him in our home. If you have the ingredients and don't know what to do with them, you can type them in and the name of his book with the recipe will pop up (although I admit that its probably only suitable if you have his books LOL...but if you don't, then I recommend them 100%)

If you like spicy chicken try using blackening season... u can find it at any grocery store. All I do is coat the chicken with the spice and cook it in a pan with a healthy butter substitute. It's pretty quick too..I usually use the chicken strips, I think they are faster than the breasts of chicken. I like to add it to romaine lettuce and make a salad out of it. Of course you could use any spices just to change up the flavor of the chicken.

Ok this is going to sound really weird but trust me, it tastes really good! This is a WW recipe...

1 lb chicken
1 cup ketchup
1 can diet soda

Cut the chicken into 4 pieces...Mix ketchup and soda and pour over chicken in a pan. Bring to a boil and simmer for 30-40 mins until chicken is cooked. Turn up the heat and stir...The ketchup/soda mixture will thicken into like a BBQ sauce.

It's so good and so easy! It seems weird at first because the soda and ketchup doesn't mix well but once it cooks, it becomes more like bbq sauce texture...Also I like how the chicken becomes almost like stew meat and almost is falling apart because it's tender.

ETA : You can basically use any kind of diet soda...The other night I used diet wild cherry pepsi!

I've used that recipe with Diet coke, its really good. Its even better with full sugar coke because it goes lovely and sticky mmmmmmmmmmmmm

I don't add anything else to it...The sauce is good enough to me...It's like a sweet bbq sauce...It's 4pts per serving and it makes 4 servings with a lb of chicken.

I have chicken in the oven now. All I did was smother it with some KC Masterpiece BBQ sauce. I also made roasted red potatoes to go with it.

Somthing else I do is take chicken breasts and cover them in tomato sauce and italian seasoning and stick them in the oven...Bake until done, cover them in cheese and bake until the cheese melts. Yummy and low carb

This sounds really good!! It sounds weird, but I bet it does taste really good! I am going to try this out, I have everything except the diet soda so I will have to get a can and try this out... I will let you know what I think. Thanks for posting this!!

If you have a crockpot it is great for chicken. You can put some skinless, boneless chicken breast in there and add some Campbell's Cream or Mushroom soup or Cream of Chicken soup to the chicken or a can of both, add in some water and seasoning salt and pepper and let it hang out all day in the crockpot on low or to speed things up you can always put it on high for a few hours.
Instead of the Cream of Mushroom or Cream of Chicken soups you can just add the chicken in the crockpot with your favorite BBQ Sauce and add in a little water and let cook.
You can do so much with Chicken in a crockpot you can even add in some potatoes or veggies and you got a whole meal with not doing a bunch of work, you can add in so many seasonings to make a bunch of great dishes. You could even make homeade chicken soup in your crockpot, it is sooo good!
I also love using the George Foreman Grill for when we don't BBQ outside you can season your chicken breast and put them on the GF Grill and they are great along with some veggies grilled on there Zuchinni, Squash or any type you like and you got a great healthy meal within minutes.
There are so many things you can do with chicken!

Yep you can marinate the breasts in Italian dressing, then just throw them in the oven. I like the boneless skinless ones because they only take about 35 minutes to bake at 400 degrees.

If I get the bone-in breasts with the skin on I like to sprinkle them with lots of poultry seasoning and garlic powder, salt and pepper. But before I do this I take a Vidalia onion and cut it into rings and put it in the bottom of the baking dish. Then I put the chicken on top of the onions and season it with those spices. As the chicken bakes, the juices flavor the onion and the onion also picks up the flavors of the spices. Then the onions get nice and soft and caramelized. The skin is soo good-I know it's awful for you but dang is it good...

Oh I bake that at 350 for an hour usually. Man I'm so hungry right now!
