Default Chicken Salad Recipe

I am looking for a chicken salad recipe. I LOVE tuna but want to find an alternative. It has to be tasty and low carb. Any suggestions??

I just saw Sandra Lee on Food TV make a chicken salad and thought it looked good. Then I see your post! Isn't that funny! This looks pretty low carb, maybe take out the chow mein noodles, they were only a garnish anyway...

Salad Chinios
1 (10-ounce) can premium chunk chicken breast, drained and chilled
2 cups coleslaw mix (shredded cabbage and carrots, without sauce)
1 (14-ounce) can chow mein vegetables, drained and chilled

Dressing, recipe follows
1 (5-ounce) bag prepared green salad
1 (5-ounce) can chow mein noodles
1 (11-ounce) can mandarin orange segments, drained and chilled

Serving suggestion: fresh melon skewers or sliced fresh pineapple

In a large bowl, toss chicken, coleslaw mix, and drained chow mein vegetables until well mixed. Toss chicken mixture with enough dressing to coat well. Line individual bowls or plates with a small amount of green salad. Spoon chicken mixture on top of green salad. Garnish with noodles and orange segments before serving.


Dressing:
2/3 cup mayonnaise
2 tablespoons reduced-sodium soy sauce
1 teaspoon ground ginger

In a small bowl, whisk mayonnaise, soy sauce, and ginger until blended. Set aside, or refrigerate, if not using soon. Whisk again after refrigerating.

Ok Sara I am doing this from memory - will have to look up the recipe when I get home, just to be sure. But I'll try anyway

Almond Dill Chicken Salad

2 cups chicken breast (or large can chicken)
1/2 cup sliced almonds (toasted)
1 can water chestnuts chopped
1/2 cup celery chopped

1/3 cup light mayonnaise
1/4 cup light sour cream
1/8 teaspoon white pepper
1 teaspoon dried dill


Mix the chicken, celery, waterchestnuts and almonds together in a bowl. In a smaller bowl mix mayo, sour cream, pepper and dill. Add the mayo mixture to the chicken. Chill before serving.
This is a great recipe and I usually have some of it in my fridge.

I personally make chicken salads with a bit of curry powder, salt, and pepper mixed in light mayonnaise (1/4 to 1/2 teaspoon, depending on how much you like and how much you're making), and then I throw in the chicken, a few halved grapes, some dried cranberries, diced celery, diced carrots, and/or diced apples, depending on what I have in the refrigerator. I'm not sure if that's low carb (are fruits and carrots low carb?).. I do more of a low GI diet than low carb specifically, but I do think it tastes very nice.

I use a very basic recipe, but everyone loves it.
In fact it is always the first thing requested when we plan a party.
But I don't use any real measurements.

Boil chicken. I use thighs and breasts.
Cook Chicken
Grind chicken.
Add chopped celery and chopped onions to taste.
Mix
Add salt and pepper to taste.
Mix
Add mayonnaise until it is a nice consistency.
Mix well.
Chill for an hour or more.

I love to put sliced black olives in my chicken salad....along with light mayo or miracle whip and dill pickles.
