Default Chicken schnitzel burgers with radish and cucumber salsa



Ingredients (serves 4)

  • 1 tablespoon olive oil
  • 20g butter
  • 4 crumbed chicken breast schnitzels
  • 4 hamburger buns, split in half
  • 1/4 cup whole-egg mayonnaise
  • 4 green oak lettuce leaves
  • oven chips, to serve
  • Radish and cucumber salsa
  • 1 bunch radishes, trimmed, thinly sliced, cut into thin strips
  • 1 Lebanese cucumber, thinly sliced, cut into thin strips
  • 2 tablespoons sour cream
Method

  1. Make radish and cucumber salsa: Combine radish, cucumber and sour cream in a bowl. Season with salt and pepper. Cover and refrigerate until ready to serve.
  2. Preheat oven to 150°C. Heat oil and butter in a large, non-stick frying pan over medium-low heat. Cook schnitzels, in batches, for 6 to 8 minutes each side or until cooked through. Transfer to a wire rack. Place in oven to keep warm while cooking remaining schnitzels.
  3. Preheat grill on high heat. Toast cut sides of buns until light golden. Place bun bases on plates. Spread with mayonnaise. Top with lettuce. Cut schnitzels, if required, and place on lettuce. Spoon over salsa. Cover with bun tops. Serve with chips.
