Default Chocolate Coconut Cake (Low Carb)

Very yummy!

5 eggs
sweetener (I used 1 tablespoon of liquid sweetener)
150 g (about 5 oz) ground almonds
80 g (~3 oz.) grated coconut
1 pck baking soda
3 heaped tablespoons (about 2 oz.) protein powder (I used vanilla whey protein powder, you can also use chocolate protein powder etc.)
2 T (if you used chocolate protein powder: rather 2 t) cocoa powder (the unsweetened choice, for baking etc.)
3 heaped T mascarpone cheese (a very creamy Italian cheese with a neutral, slightly sweet taste)

Mix the ingredients well (you might want to beat up the eggs and sweetener first and then add the other ingredients one after the other)
and put in a baking dish for ring cake. You'll have to butter it well, the mixture is rather sticky. Alternatively you could use silicon baking dishes to peel off.

Bake for 35-45 minutes at 160 C/320 F (or, if you have an oven without circulating air) at 190 C/374 F.
