Default Chocolate Low GI?

I did a search on the internet and Chocolate comes up as low GI? How can that be? Given that most chocolates have added sugar in them, how could that be?

Any idea?

Maybe it was that really dark chocolate, that's I think got to be over 75% cocoa. So there's very little sugar in it.

No. It said milk chocolate. And I also saw apple muffin listed as low GI. I am really confused.

I think it depends on the fat content in the milk chocoate. When I eat really good milk chocolate (like Dove or Ghiradelli (sp)), my blood sugar does go up, but it goes up slowly . . . as opposed to when I eat something like a potato (very HIGH on the glycemic index), when it shoots up like a rocket and stays high for HOURS.

Maybe the Apple Muffin's fiber content has something to do with why it's low on the index. I can't eat muffins because I am allergic to wheat, corn, and soy . . . so I have no insight to offer there.

Good luck!
