Default Coconut oil/coconut recipes anyone?

I'm looking for some healthy recipes of salads, stir-fries or pretty much anything that does not include refined foods and sugars, with either coconut oil, raw coconut, or coconut flakes

russkaya,

That's great that you're using coconut oil. I saw that you lost 70 lbs...did coconut oil help you with that? I've read that it helps with the metabolism, and have noticed my own weight loss accelerating since I started about two weeks ago.

Here's my super-fabulous ultra-terrific morning smoothie. :-)

1 C frozen berries (you can probably use fresh, but frozen makes a thicker drink.)
1 C milk (I use raw, unhomogynized whole milk.) sometimes I sub coconut milk.
1 Tbsp. freshly ground flax seeds
1-2 Tbsp. virgin coconut oil
Stevia to taste

Crush the berries first, then blend everything else with it.

I also like to use VCO to make vegetable soups, just saute' some onion in garlic in a tablespoon or so of oil, add your veggies and herbs/spices, simmer with some stock or water until tender and puree in the blender (can you tell I love my blender? :-))
