Default a couple soup recipes for slowcooker, yum yum, low in points even

here is a nother recipe that is on my to do list to try, and it seems crockpot friendly as well for any of you who have a slow cooker

Makes 10 servings

2 lb of frozen veggies - your choice--California Medley is good
3 cans Fat-Free Chicken Broth
1 can of Rotel tomatoes--it's up to you how spicy you want it!
10 oz. Light Velveeta

Dump all ingredients in the pot and bring to a boil. Let simmer for 4-5 minutes.
Add 10 oz of Light Velveeta in small pieces (to melt faster).
When it's melted in, you're ready to eat.
I don't even need crackers with this.

SERVING SIZE: 1 cup

slow cooker corn chowder
2 cup potato(es), cut into 1/2-inch cubes
1 large carrot(s), diced
1 cup leek(s), chopped, white part only
1 medium garlic clove(s), minced
4 cup fat-free chicken broth
1/2 cup uncooked barley, pearl
1 piece bay leaf
1/4 tsp dried thyme, crushed
1/4 tsp black pepper
4 oz cooked Canadian-style bacon, cut into 1/4-inch pieces
1/2 cup fat-free evaporated milk
2 fl oz fat-free creamer, such as fat-free half-and-half
In a slow cooker, combine potatoes, carrots, leek, garlic, chicken broth, barley, bay leaf, thyme, pepper and Canadian bacon. Cover and cook on low for 6 hours or until vegetables and barley are tender.


Stir in evaporated milk and half-and-half and heat through uncovered, about 10 minutes. Yields about 1 1/4 cups per serving. 2pts

Sounds good! Thanks for sharing with us. Is the one point in Weight Watchers points? Is it one point for each recipe for a cup? I really want to try that first recipe out. Let me know. Thanks!

My DH & I loved this chili recipe

The Ultimate Chili
POINTS® values per serving | 7
Servings | 6

Soups |

Ingredients

1 pound cooked extra lean ground beef, 17% fat
45 oz Green Giant Canned Dark Red Kidney Beans
43 oz Del Monte Mexican Recipe Stewed Tomatoes
1/4 cup red wine vinegar
1 tsp ground cumin
1 tsp dried basil
1 Tbsp dried parsley

Instructions

Brown groudn beef & drain off grease. Season with salt and pepper. Combine all ingredients in a slow cooker and cook on high for 6 hrs. or low for 8 hrs. YUMMY!

This sounds yummy! I'm a little confused though.......why do they call it "corn chowder" if there's no corn in it?

you raise a good point! lol. i'm not sure. and yes it is one point for one cup for the top soup recipe. : )
