Thumbs up Courgette, Feta and Mint Salad

Serves 4
1tbsp sesame seeds
6 large courgettes
3tbsp olive oil
150g feta cheese, crumbled
handful of fresh mint leaves
sea salt and freshly group pepper

FOR THE DRESSING
4tbsp olive oil
1tbsp lemon juice
1 small garlic clover, crushed
sea salt and freshly ground pepper



1. Put the sesame seeds into a dry frying pan and toast over medium heat until golden. Remove from the heat, set aside and allow to cool

2. Cut the courgettes diagonally into thick slices, toss with the olive oil and season with salt and pepper. Cook over a hot grill pan for two to three minutes on each side until charred and tender. Remove and let cool.

3. Put the courgettes, feta and mint into a large bowl.

4. Put all the dressing ingredients into a screw top jar and shake well

5. Add the dressing to the courgette mixture and toss well until evenly coated. Sprinkle on the toasted sesame seeds and serve immediately.


It's a tasty way to get some extra veggies!

Hello

Courgette must obviously be called something else in the US

And I don't know what it is!!!! Which might explain why I can never find the carb count on USA carb counter sites!

In the Atkins diet counter I found it listed as courgette in the Squash section. Okay, if I describe it, can you tell me what you call it over there?

hahahaha this is actually quite difficult..... okay, it is a form of squash but small and green, like a small cucumber. Does that help?

Anyone know what US name?

it's a zuccini I think... zuccini tastes like squash and that's fits a cuccumber like description.

Now I'm a moron - if I had seen zuccini written anywhere I would assumed it was a type of pasta!

wow, now I can see why some people were getting confused over the ingredients in the PCOS diet Book!
