These recipes are from a newsletter from around 1996.
Chicken in a pot:
whole or cut up 3 lb chicken
2 carrots, sliced
2 onions, sliced
2 celery stalks with leaves, cut into 1 inch pieces
2 tsp salt
1/2 tsp black pepper
1/2 cup water OR chicken broth
1/2 to 1 tsp basil
Put half of veggies in bottom of crockpot. Add chicken. Top with salt, pepper, liquid and rest of veggies. Sprinkle basil on top. Cover and cook on low for 7 to 10 hours or high 2 and 1/2 to 3 and 1/2 hours, using 1 cup of water.

Cheese and Potato Casserole:
2 pounds hashed brown potatoes
20 oz chedder cheese soup
13 oz evaporated milk
1 can french fried onions
salt & pepper
Combine potatoes, soup, milk and 1/2 of the onion rings and pour into greased crockpot. Add salt and pepper to taste. Cover and cook on low for 7 to 8 hours or on high for 4 hours. Sprinkle 1/2 of onion rings over top before serving.
1 and 1/2 pounds ground chuck
1 egg, beaten
1/4 cup milk
1 and 1/2 tsp salt
2 slices of bread, crumbed
1/2 small onion, chopped
2 tbsp chopped green pepper
2 tbsp chopped celery
4 to 6 potatoes, peeled and cut up
ketchup
Mix egg, milk, salt and bread and allow to soften. Mix ground chuck with chopped veggies. Shape into loaf and put into crockpot. Top with ketchup and green pepper. Place potatoes on sides of laof. Cover and cook for 1 hour on high or 8 to 9 hours on low.

Corn and Ham casserole:
1/4 cup butter
1/2 small green pepper chopped
1/4 cup flour
1/2 tsp paprika
3/4 tsp salt
1/4 tsp pepper
1/8 tsp ground thyme
1/8 tsp marjoram
2 cups of milk
8 oz of cream style corn
2 cups diced cooked potatoes
1 medium onion, chopped
2 cups diced cooked ham
1 cup shredded sharp chedder cheese
1/2 tsp dry mustard
Saute green pepper in melted butter in saucepan. Stir in flour and seasonings. Slowly stir in milk and cook until thick. Add to crockpot with all other ingredients and stir well. Cover and cook on low 6 to 8 hours.
Sounds really really good! good winter meals!!! in teh cicken in apot one i make somethign similar to that in the oven and I also throw in potatos, its really good!!!

Seafood chowder:
2 pounds fresh or thawed fish fillets
1/4 pounds salt pork or bacon, diced
1 medium onion, chopped
4 medium potatoes, pared and cubed
2 cups water
1 and 1/2 tsp salt
1/4 tsp epper
14 oz evaporated milk
Cut fish into bite sized pieces. In a skillet, saute salt pork and onion until golden brown; drain off fat and put into crockpot with fish and remaining ingredients. Cover and cook on high 2 hours, then turn to low for 4 to 6 hours or until potatoes are tender. Serve with french bread.

Corned beef and cabbage:

3 to 4 pound corned beef brisket
2 to 3 medium onions, quartered
Cabbage cut into small wedges
1 to 2 cups water
Put al ingredients into crockpot in order listed. Cover and set to lowfor 12 to 24 hours or on high for 7 to 10 hours. After 5 to 6 hours on low or 2 to 3 hours on high push cabbage wedges down into liquid.

It was my understanding the women with PCOS should avoid Potatoes... am I wrong?? Oh I hope I am. I LOVE them, but haven't had any since I was diagnosed earilier this month....
Someone please post and tell me I'm wrong and they are OK to eat!!
Potatoes are terrible for blood sugar/insulin problems that a lot of women with PCOS have. I do not eat potatoes, so I would substitute another lower GI veggie in for the potatoes (Cauliflower, sweet potatoes, etc.) or lower GI rice. Some cysters don't have insulin problems, so they don't avoid potatoes. I haven't had a potato since October 2002, lol, and I do miss them.
ok ok i never said it was Healthy, I just said it was gooooooood YUM!! heheh esweet potatos work nicely too. very yummy

Ingredients:

1 White Onion
1 Red Bell Pepper
1 Green or Orange Bell Pepper
1 Can Diced Mexican Style Tomatoes
1 Jar Salsa
Directions:
Dice Onion and Peppers. Put Chuck roast, onion, peppers, tomatoes, and salsa (in that order) into crockpot. Cook on High for 6 hours. Spoon into taco shells (I make my own which taste much better...just by frying them in oil and shaping them in the pan.) Top with fat free (or low fat) sour cream and shredded nacho/taco or mexican style cheese. ENJOY!
